Appetizer (Hot): Roasted Sesame Spice & Cocoa Pork

Ingredients:
· 2 Tbsp Toasted Sesame Seeds
· 2 Tbsp Unsweetened Cocoa Powder
· ½ tsp each allspice
· ½ tsp ground ginger
· ½ tsp salt
· ½ tsp freshly ground pepper
· 2 to 2 ½ lbs. boneless pork tenderloin
Directions:
1. Preheat oven to 350 degrees F.
2. Spray a shallow baking dish with nonstick cooking spray.
3. Stir together all ingredients all except pork in a small bowl.
4. Pat pork dry with a paper towel and coat on all sides with mixture, patting excess on top.
5. Place in prepared dish and cook for about 30 to 40 minutes or until pork reaches an internal temperature of 150 degrees F.
Yield: 6 to 8 servings
