Appetizer (Hot): Puff Pastry with Cremini Mushrooms
While this appetizer may seem like a lot of last minute work, you can actually prepare the mushroom mixture the day before, and the puff pastry earlier in the day. Then just put them together and bake a few minutes before the party starts. Cheers, Tina

Ingredients:
· 1 10x10 inch sheet puff pastry, thawed and rolled out 1/8 inch thick
· 1 egg, lightly beaten
· 4 Tbsp (1/2 stick) unsalted butter
· 4 cups sliced cremini mushrooms
· ¾ cup chopped onion
· Kosher salt and pepper
· ¼ cup Calotte Blanc or other dry white wine
· ¼ cup crème fraiche
· 2 Tbsp grated Parmesan
· 2 tsps chopped fresh thyme
Directions:
1. Preheat the oven to 400 degrees F.
2. Lay pastry on a lightly floured surface. Trim the sides to form an 8-inch square. Cut into 36 squares.
3. Place on a baking sheet and brush with the egg.
4. Bake until golden, 10 to 12 minutes. Let cool.
5. Lower the heat to 350 degrees F.
6. Heat the butter in a large nonstick skillet over medium-high heat. Add the mushrooms and onions and season with salt and pepper. Cook until the mushrooms begin to brown, 7 to 10 minutes.
7. Add the wine and cook until the liquid is absorbed, 3 to 5 minutes.
8. Put the mushrooms, onions, crème fraiche, Parmesan and thyme in a food processor. Pulse 3 to 4 times until the mixture is combined but not pureed.
To Assemble:
9. Cut each puff-pastry square in half crosswise and fill with about 1 /2 teaspoon of the mushroom mixture.
10. Bake until warm, about 5 minutes at 350 degrees
11. Serve Warm
