Salad: German Vegetable Salad

This is a traditional German Salad but not necessarily an Oktoberfest staple. However, I love all the colors and vegetables. It really brightens up the Oktoberfest Buffet!

INGREDIENTS:

  • 1 can French style green beans
  • 1 can small peas
  • 1 can whole corn
  • 1 cup diced green and red pepper
  • 1 cup chopped celery
  • 1 cup chopped red onion

Dressing Ingredients:

  • ¾ cup cider vinegar
  • ½ cup olive oil
  • 1 cup sugar
  • 1 tsp. salt

DIRECTIONS:

  1. Drain all canned vegetables. Mix together
  2. Mix dressing ingredients together. Keep in covered bowl in refrigerator until ready to use. Tosss with above.

Note: May use frozen vegetables, thawed and blanched.
Note: There is no mayonnaise or sour cream so perfect to leave out.
