Ingredients:

• 1 large egg white
• 1/4 cup of sugar (or a bit less, if sugar is a concern)
• 1 teaspoon salt
• 1/2 teaspoon chili powder
• 1/2 teaspoon ground allspice
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon ground clove
• 1/2 teaspoon ground cumin
• 1/2 teaspoon cayenne pepper (or more if you want some heat)
• 2 1/2 cups mixed nuts, such as almonds, pecans, cashews, peanuts, etc.

Directions

  1. Heat oven to 300F.
  2. Whisk egg white until frothy and no liquid remains, then stir in spices.
  3. Stir in nuts.
  4. Spread on a cookie sheet lined with foil (I use my silpat) and put in oven.
  5. 5Bake 15 minutes, then take nuts out to break up the clusters.
  6. Return to oven, reduce to 250F and bake another 10 minutes (keep an eye on them so the nuts do not scorch!)
  7. Take out nuts
  8. Let them cool on the cookie sheet (nuts will turn crispy as they cool).
  9. Break up the clusters
  10. Keep in a air-tight container (I put them in little cellophane gift bags with pretty ribbons at Xmas.
