Appetizer (Cold): Smoked Almond and Cheddar Crackers

This is a tasty appetizer that can be made in advance.  You can also leave the roll in the refrigerator for a few days and bake the day you need them.  Cheers, Tina

Ingredients:

  •  1 cup smoked almonds
  • 2 cups flour
  • 2 cups shredded sharp Cheddar cheese
  • ½ cup softened butter
  • 1 – 2 tsps of water at a time as necessary until when you squeese the dough togehter it sticks.  (you may have to add as much as 10 or more tsps)

Directions:

1.       Finely chop 1 cup almonds in a food processor.

2.       Add flour, sharp Cheddar cheese and softened butter; process until mixture forms a firm dough, adding a teaspoon or two of water if needed.

3.       Shape into a log that is about 1 ½ inches in diameter and wrap tightly with plastic wrap; refrigerate until very firm.  The dough can be refrigerated for several days as long as there is a good amount of plastic wrap to hold in the moisture.

4.       Cut into thin slices and place on parchment-lined baking sheets.

5.       Bake at 400 degrees F for about 10 minutes or until golden around the edges.

6.       Let cool completely then store in an airtight container

Yield:  about 80 small crackers
